i have been having a sweet tooth lately and recently i have been wanted something a little more on the tart and fresh side so i hunted down the best recipe for lemon bars and i am very excited to share it with you.

here's what you'll need

crust: 1/2 pound butter at room temp
1/2 cup sugar
2 cups flour
pinch of salt
~
filling:   6 large eggs at room temp
3 cups sugar
2 tablespoons grated lemon zest
1 cup of fresh lemon juice
1 cup flour
powdered sugar for dusting

1. after gathering all your ingredients preheat your oven to 350 degrees
2.for the crust combine the butter and sugar in mixer on low until nice and creamy then add the flour and salt
3. dump dough on floured surface and gather into a ball (this part is a little tricky because its quite crumbly) press into a 9x13 baking pan and chill for a few minutes and then place in oven for about 15 minutes or until the crust turns a soft brown
4. for the filling whisk the eggs, sugar, lemon zest, lemon juice, and flour.

pour filling mixture over the crust and bake for 30 minutes or until the filling has set.

when we made this i was getting antsy and didn't let it completely cool before eating so it was not as.....tasty. let it set in the fridge until the filling is completely cooled down and then dust with powdered sugar!
